We are a modern sushi restaurant combining traditional Japanese flavors with innovative culinary techniques, offering an artful fusion of fresh, sustainable ingredients served in a chic, minimalist ambiance.

Farm, Flour & Fire
At Woodbelly, our commitment to real food starts right at the roots. We make our pizza with naturally leavened, hand-mixed dough that undergoes a two-day fermentation process for maximum nutrition, digestibility, and bold flavor. Baked on an 800+ degree hearth, our crust hits the perfect balance of tangy sourdough and sweet, freshly ground wheat sourced from the river bottoms of Quebec and Vermont.
Our "farm-to-table" approach extends far beyond our kitchen. We grow and gather our own ingredients while partnering directly with local organic producers like Provender Farm in Cabot. From freshly milled flour supplied by Elmore Mountain Bread to edible flowers harvested for our seasonal salads, every bite highlights the rich agricultural heritage of our local community.

Our Journey
Woodbelly began with a simple passion: connecting local agriculture with incredible food. Our story started on the farm and at local farmers markets, where we fell in love with feeding our community. That passion grew into mobile wood-fired catering, a full-fledged brick-and-mortar restaurant, and today, our bustling all-day cafe and outdoor pizza hub.
